Frugal Food: Black Bean Burgers

I’m making an effort to get in the kitchen more and learn more about cooking. Having a husband who is a whiz in the kitchen has made me very spoiled. Often times, I’m intimidated to get in the kitchen because he’s so amazing and I’m so... not. But every Sunday I am concentrating on making something for us to eat.

Three Sundays ago, I made pizza casserole for the second time. This time last week, I made the sour cream pound cake. So what did I make two Sundays ago? Black bean burgers.

I may or may not have mentioned here that I don’t eat red meat. Hubby makes a mean turkey burger, and I’m not a huge fan of handling raw meat. I offered to make dinner that Sunday and had been holding on to a black bean burger recipe that I found in an issue of All You magazine. We had all the ingredients in the kitchen (sans the celery) and we had a few hamburger buns leftover from a previous meal.


The results were tasty! Of course, my version doesn’t look as pretty as the recipe’s original picture. I dressed my burger with taco sauce to keep a Mexican feel to the dish (I love Mexican flavors). Next time, I want to add guacamole and cheese, or do as the recipe suggests and serve with lettuce and tomato.
